The simultaneous motion of the dough hook and bowl rotation, kneads the mix, causing the uniformed hydration of the dry flour. This also activates the gluten in the flour, resulting in a smooth looking, elastic dough. Well developed gluten, allows the yeasted dough to stretch and expand as it rises.
